Sarnt Utamachote (unthaiteld)
The debut episode of SSUARRASA features our friends and colleague Sarnt Utamachote from Unthaiteld. The episode kicks off at Movingpoets Novilla, where Ariel and Sarnt team up to cook the infamous Thai street food dish, Pad Kra Pao. Amidst the cooking process, Pad Kra Pao becomes a catalyst for conversation, sparking discussions around culinary culture in general and offering reflections on the diasporic significance of certain national dishes, often viewed through the lens of "nation stereotypes," particularly from the perspective of the white gaze and its romanticized and problematic perceptions. The dialogue transitions to the ASSOY pop-up installation, where they talk about the high and the low being southeast asian living in berlin, past and current practice, being fragile and ecstatic, and so on. This episode also includes Ariel's recipe for Pad Kra Pao and a selection of tunes curated by Sarnt.

Ingredients:
- Protein:
- 1 lb ground chicken, pork, beef, or tofu (or a mix of your choice)
- Vegetables:
- 2-3 cloves of garlic, minced
- 3-4 red chili peppers, thinly sliced (adjust according to your heat preference)
- 1 small onion, sliced
- Sauce:
- 2 tablespoons fish sauce (or soy sauce for vegetarian option)
- 1 tablespoon oyster sauce (or vegetarian mushroom sauce)
- 1 tablespoon soy sauce
- 1 teaspoon kecap manis (indonesian sweet soja sauce)
- 1 tablespoon Ariel's sambal!
- Herbs:
- 1 large handful of Thai basil leaves (also known as holy basil)
- Other:
- 2-3 tablespoons vegetable oil
- 2 eggs (optional)
- Steamed jasmine rice (for serving)
- Prepare Ingredients:
- Begin by preparing all your ingredients. Mince the garlic, slice the chili peppers, and chop the onion.
- If you're using eggs, you can fry them sunny-side-up in advance.
- Cook the Protein:
- Heat a wok or large skillet over medium-high heat. Add 2-3 tablespoons of vegetable oil.
- Add the minced garlic and sliced chili peppers to the pan and stir-fry for about 30 seconds until fragrant.
- Add your ground meat (or tofu) and cook until fully cooked through and slightly browned, breaking it up with a spatula.
- Add Onion:
- Add the sliced onion to the pan and continue to stir-fry for 1-2 minutes until the onion softens.
- Make the Sauce:
- In a small bowl, mix together the fish sauce, oyster sauce, soy sauce, and sugar.
- Pour the sauce over the meat and vegetables in the pan and stir well to combine.
- Add Basil:
- Once everything is mixed together, add the Thai basil leaves to the pan and cook for an additional 1-2 minutes. The basil should wilt and release its aroma.
- Serve:
- Serve the pad kra pao over steamed coconut jasmine rice.
- If desired, top with a fried egg for an extra touch.
